Russian Apple Cake Recipe

recipe_russian_apple_cakesThis sweet treat is traditionally served as an upside-down cake. We’ve adjusted the recipe to make bite-sized mini upside-down cakes.

Preheat oven to 350°. Lightly grease and flour mini muffin tins. Peel and core apples. Dice into 1/4″ pieces. Fill tins 2/3 full with apple pieces.

Lightly beat eggs with a fork. Mix in flour and sugar until well blended. Spread a spoonful of batter over the apple pieces in each cup.

Bake 8-10 minutes or until lightly brown and toothpick inserted in center comes out clean. Loosen edges with a knife. Lift out mini cakes and turn over on serving plate.
