Russian Apple Cake Recipe
This sweet treat is traditionally served as an upside-down cake. We’ve adjusted the recipe to make bite-sized mini upside-down cakes.
You Need:
- Thinking Day Passport
- Printable Recipe Card
- 3 Granny Smith Apples
- 1 1/3 Cup of Sugar
- 1 1/3 Cup of Flour
- 4 Large Eggs
- Non-Stick Cooking Spray or Shortening
Instructions:
Preheat oven to 350°. Lightly grease and flour mini muffin tins. Peel and core apples. Dice into 1/4″ pieces. Fill tins 2/3 full with apple pieces.
Lightly beat eggs with a fork. Mix in flour and sugar until well blended. Spread a spoonful of batter over the apple pieces in each cup.
Bake 8-10 minutes or until lightly brown and toothpick inserted in center comes out clean. Loosen edges with a knife. Lift out mini cakes and turn over on serving plate.
